Quinoa Cottage Cheese Pancakes

Darn!  We had a great video to go with this recipe but unfortunately, somehow we lost it!  Boo!  So apologies that there is no visual instructional how-to for these pancakes.  Fortunately, we did have stills of the "before and after."

These are delicious!  High protein and gluten free, they are completely satisfying.  If you don't have quinoa flour, feel free to go right ahead and use whatever kind you have on hand. The real star in these is the cottage cheese so you just need a little something to act as a binding.

Trust me, these will no doubt become a family favourite.  So easy and so tasty.

Here's what youll need:
                             1/2 C quinoa flour (can sub with reg or whole wheat)
                             1/2 t baking powder
                             1/2 t salt
                             2 t brown sugar
                             2 eggs
                             1 C cottage cheese
                             Butter for frying

                             How to:
                             1)  Mix all dry ingredients into a bowl.
                             2)  Mix eggs into cottage cheese.
                             3)  Mix egg-cheese into the dry stuff.
                             4)  Stir until completely blended
                             5)  For each pancake, pour about a 1/4 C 
                                   of mix onto a hot butter greased griddle.
                             6)  Flip when bubbly at edges and 
                                   brown underneath.
                             7)  Makes about 6 - 4" pancakes.
